I don't know about the "special" Iomega SCSI card, but if your Jaz drive is connected to a "normal" (for lack of a better word) SCSI card, FreeBSD should detect it on bootup and you should be able to deal with your Jaz drive just like any other device (newfs, mounting, etc).
