Thanks to everyone who responded to my query.
It looks like vinum and/or ccd will do exactly
what I want and they look very straightforward
to configure.

I probably could have discovered this myself
(as several people pointed out), but I was
blinded by my assumption that RAID implied
redundancy-- so I didn't look at the RAID
stuff at all.  Now I know better.
