Setup is almost foolproof if you follow http://web.infoave.net/~dsill/lwq.html and together with Inter7's vpopmail (http://www.inter7.com/vpopmail) all virtualhosting needs I could imagine have been solved. (And despite the probably involved license problems): When gets sendmail substituted through qmail right from the start? I mean you guys always want to be the fastest and most secure, so that's surely an option.
