What I ended up with is using a EEE-PC with Ubuntu and minicomm set up as modem-less connection. I only needed this to set the plug to use a SD card for the main storage and not wear off the internal flash memory and have extra storage. Under normal operation you do not need the serial console since you can connect to it using ssh once the plug boots and acquires an IP using DHCP. The default name is debian or look into the DHCP server log and find the assigned IP.
