The OP has allready configured sendmail the way he wants. I've seemed to made an error. Setting sendmail_enable="NO" results in disableling incomming sendmail service. But you incorrect about the default. It seems that you have modified /etc/defaults/rc.conf. Mine (4.9) says YES.
