That depends. If you're running Linux, use diskpart. If you only have EFI, get Intel's EFI tool. When running FreeBSD, use gpt(8). So far I always netboot a new machine and use gpt(8) to partition the disk. newfs(8) the partitions and copy bits over. Then I reboot the machine locally. Works like a charm.
