 Most probably these applications use hardcoded default fonts which aren't 
 available on your system and get replaced with a font that doesn't have the 
 right symbols by Xft/Fontconfig. In particular fwbuilder is infamous for 
 rather bad UI code.
 
 Try finding your way to the options menus/dialogs of those applications and 
 set a different default font.
