You can try it but there is some problem with installer trying to create 
hardlinks (it fails if you have /var and /usr on separate filesystems)
I don't know how to change this behaviour and nobody else stepped in.

Kibana7 and Elastic7 are already on 7.6.1

If you are using prebuilt packages then you need to use the Latest 
instead of the Quaterly.
