Hmm, jextract (the version being installed) depends on java 23.  Using
system installed version, if I understand it right, java 8,
doesn't have Foreign Function & Memory (FFM) API at all.

jextract is tightened to a specific java version, and there are distinct
versions for java 18 and up (https://github.com/openjdk/jextract).

Probably, jextract needs to be installed into $PREFIX/jextract23?
