OS of course should be FreeBSD. There is a nice howto for installing postfix with mysql/courier-pop3d on http://kirb.insanegenius.net/postfix.html As for system requirements... it really depends on your users and how much they use the service. but conservatively you could still do ok with about 60GB hard disk space, maybe a 1GHZ box with 512MB RAM.
