The "updateinfo" subcommand should do what you want. I found this page describing that and some other functions of the tool: http://scottnesbitt.net/ubuntublog/?p=269. The only issue with pdftk right now is that it doesn't install on 6.x due to problems with the underlying gcc Java toolchain.
