Apparently the settings are cached somewhere, kvm (#freebsd-gnome) suggested gconfd. A SIGHUP might help, but I simply restarted gnome and reloaded evolution. Your old (1.5.7) settings should be gone now, and hopefully it will try to migrate from your 1.4.x data.
