We run courier-imap cause that fits best into our qmail/vpopmail
env. YMMV, of course.

As for FTPd: if you don't need the feature bloat, proftpd and wu-ftpd
provide, I suggest to stick with ftpd since for that one, FreeBSD
takes care of the security issues which in all cases is better than
either one of other two.
