Well, if you don't have a 3D-accerator in the test box, or have the time to get that working with linux emulation I'd suggest looking into "Netrek", www.netrek.org. Very client/server. The dogfighting mechanics are easy to pick up, and lag, when it exists is noticable in those fights. Some of the clients will keep track of ping statisics over the life of a game.
