cat /etc/sendmail.cf | grep DZ, or you could mail yourself and look at

Yes.

Sort of. You need to create a (plain text) mapping table with vi or
whatever, and then convert this into a database with makemap. By default
sendmail will look for this database in /etc, but this can be
overridden.
