I'm interested in this too. In the process of investigation I've found that
you need a few pieces to replace Exchange:
An IMAP Server
An LDAP Server for the Company Address Book
I got most of this from skimming the Exchange Server Replacement How-to:

I'd be interested in doing this but I have to say that Cyrus Imapd left a
really bad taste in my mouth. Bad enough that I used Courier instead. Still
the Idea of having a secure IMAP server that I could put in a DMZ would be
cool.
