Conerting pools between different types is not possible, with the exception of adding mirrors. That is completely dependent on the situation. raidz offers n+1 redundancy (you can loose up to one drive), while raidz2 offers n+2 redundancy (you can loose up to two drives). In both cases at the cost of diskspace. In your case with three drives, you would probably want raidz or you would only get the disk space of a single drive (thus wasting two thirds).
