If your intent is to re-map where mail destined for a given host/domain goes - (ie override DNS MX records) - then /etc/hosts is not going to do what you want. Depending on where you intend to redirect to, you'll need either mailer table, access table entries or to configure your local sendmail to receive for that domain to accomplish that.
