Short answer is: because some of the core components (gnomevfs is the main suspect) contain Linux-specific code which isn't very portable and doesn't work properly on FreeBSD. Probably something wrong with milti-threading, that significantly differs between Linux and FreeBSD. Unfortunately GNOME folks don't care much abut that, while FreeBSD GNOME team lacks developers with knowelege in this area who would be capable to track down and fix that problem(s).
