The -pX will only be updated when the kernel has been rebuilt. It 
is in /usr/src/sys/conf/newvers.sh (on my FreeBSD 7.4-RELEASE-p5) 
with:

TYPE="FreeBSD"
REVISION="7.4"
BRANCH="RELEASE-p5"

The FreeBSD Security Advisories also list this file in the "VI. 
Correction details" section.
