One thing to look for is whether the mac can access the netatalk server via IP address. If it can access the server by IP, but the server is not showing up in the chooser, it is most likely a problem with the netatalk kernel module, not with netatalk itself. I had a similar problem with a RedHat 6.2 box, I fixed the problem by installing FreeBSD 4.1.1. I've upgraded it to 4.2 recently and there have not been any problems.
