It might and probably should be operating systems, but this is just one instance, and at the time I was just expanding OSs, which should be OSes or something of the like. In the context used, it reads "Unix OSs." Figuring that Unix is a proper noun, and it is referring to all Unix variants, Unix Operating Systems seems somewhat correct.
