Greetings new commer to FreeBSD, I am sure with the correct help you can get 
all the information you need from the following references, as well as doing 
a little studying.

Sharaz made a good document to help biginners like yourself.
google open addict and look under how-to's.

It seems you want to put the right foot forward and this list is mainly used 
for promovement of FreeBSD, and I would like to tell you I would be willing 
to help you on your way to adopting FreeBSD.

There are many book on the subject, But as in any operating systems, there 
is a learning curve.

As well as the port that are already in the ports tree that deal with VoIP

Each port has a maintainer, and Information, Sources, Changes, where you can 
download (and it's Dependencies), even the maintinaers contact information
 FreeBSD is a Roll your own OS, in most cases you have to recompile the OS 
to meet your needs, this requires a good working knowledge of the OS and 
it's interworkings.

There are many book available via the various web site that are members of 
the FreeBSD community
