I believe that the mirror method would be the best idea...and then you 
could simply pull a DNS switch. Once you are absolutely sure that the 
world is running off of the new server then you could physically 
relocate the old server. Once in it's new home you could sync up MySql 
and your other apps so that no one would really know...

Of course the key to this sort of thing is your ability to manipulate 
the DNS...;)
