I am sorry if it's just me being stupid, but how can I do this when
/usr/sbin/mixer does not recognise "speaker"?

~/>mixer
Mixer vol is currently set to 40:40
Mixer pcm is currently set to 58:58
Mixer line is currently set to 50:50
Mixer mic is currently set to 0:0
Mixer cd is currently set to 52:52
Mixer rec is currently set to 0:0
Recording source: mic

~/>mixer speaker 0:0
mixer: unknown device: speaker
usage: mixer [-f device] [-s | -S] [dev [+|-][voll[:[+|-]volr]] ...
       mixer [-f device] [-s | -S] recsrc ...
       mixer [-f device] [-s | -S] {^|+|-|=}rec rdev ...
devices: vol, pcm, line, mic, cd, rec
rec devices: vol, line, mic, cd
