"make deinstall" needs to have the source extracted, to have the exact same version present as the one installed and for all the configuration options to be identical. Also, removing OpenOffice.org by hand isn't hard. All the files it installs are in /usr/local/openoffice[version], with a few additional symlinks in /usr/local/bin named openoffice*. - Bartosz
