It seems that the ethernet card I was using 3com509 wasn't in the list of
supported cards in the installer (as far as I could tell).  I swapped that
card out with a newer card and it was detected during boot.

Problem solved.  Instead of trying to edit the config settings I just
switched to a card that was more PNP.
