Generaly -STABLE if it has all the features you need.

If you need the newer features of 3.0, it might not be a bad idea to use that,
since 3.0-STABLE is supposed to come out in a few weeks. Upgrading from
3.0-CURRENT or 3.0-RELEASE to 3.0-STABLE should be alot easier than going from
2.2.8-STABLE to 3.0-STABLE.
