The *default* version (DEFAULT_VERSIONS [1]) of Python was switched from 
3.7 to 3.8 in:

/usr/ports/UPDATING entry 20210426 [2] contains the instructions for 
people for either updating from 3.7 to 3.8, or to remain on 3.7, 
fulfilling the purpose of DEFAULT_VERSIONS, user choice among multiple 
available version.
