Well, Hybrid and Bahamut are probably the best two out there.  Undernet's
IRCd (does it even have a cool name like the rest?) is pretty popular too.
There are all sorts of variations out there based on these main three.  For
example, Bahamut is actually a blending of dreamforge and hybrid but isn't
much like either one.

I'd recommend DALnet's daemon (Bahamut - http://bahamut.dal.net/) because
the support is out there and it's well documented anyway.  The latest
official release (mandatory upgrade for DALnet's servers) is 1.4.34 and was
released about a week ago (ftp.dal.net).

On the Bahamut site they tell you all sorts of things and how to install.
They even used to have several tutorials on how to secure FreeBSD for IRCd
and how to modify FreeBSD to get the most out of the daemon.  I can't find
all of them but I have found this one
http://www.dal.net/admin/vote/seceval.php3 which is relatively new.  If you
search around you might find some different ones prepared by other DALnet
admins/coders.


On another note, as you probably know, running an IRC server opens a large
can of worms.  Unless it's completely private it will get attacked
regularly.  A lot of people don't plan for this.
