Take a look at syslog-ng. I'm very happy with it. I configured mine to log to /var/log/$hostname/$date-messages, and it dumps one file per log (i.e. messages, auth) prefixed with the date into the directory (one directory per host). That's easily configured in syslog-ng.conf. For example: destination messages { file("/var/log/$HOST/$YEAR-$MONTH-$DAY-messages"); }= ; I highly recommend it over the plain old syslog.
