i'm too new to answer that in detail, but there are
different ways of doing it...

one is to enable the firewall and allow only the ports
(and even ip addresses) u like open for others to
connect.

another way is to remap the ports so if people scan u,
they usualy scan for well known services-ports, they
get nothing on the standard ports, but your services
listen to a remaped port (its number is chosen by
you).

i think there is also spesific apps that block (or
monitor) only certain ports...not sure though. dont
know if they are popular in unix world.  they're used
a lot in ms-win for blocking netbios etc.

probably your best bet is to enable the firewall.
