Unless you mounted the NFS volume soft for interruptible (intr), these are stuck permanently. Welcome to the joys of NFS. :) If you're seeing this on new mounts, I strongly sugget getting a network capture and viewing it with ethereal. Its quite good at decoding the RPC calls and can shed some light on the situation.
