Enlightenment doesn't use Gnome's settings. You can middle-click on the background and use the settings menu to configure E. You can also install the x11-wm/e16utils port to edit the menus and keybindings if you don't like doing it by hand. I'm not sure about the font problem, try using a theme with different fonts or changing the fonts in the default theme.
