In a simple load-shared pool, individual disk vdevs on the pool can easily be turned into mirror vdevs. Later you can convert back to simplex if you like. This means that you can create the simple load-shared pool and add redundancy later. I have done this before. Just make sure to read the documentation so that you add the mirror disk correctly.
