I am also learning IMAP so pardon me if this is not what you are looking for. I was having the same difficulties that you are having and was really frustrated. My local Library had an O'Reilly book called "Managing IMAP" with detailed instructions on Cyrus and UW IMAP servers. It seems pretty good even though it is not FreeBSD specific. It is good enough that I will probably go buy a copy.
