% grep sendmail /etc/defaults/rc.conf
sendmail_enable="YES" # Run the sendmail daemon (or NO).
sendmail_flags="-bd -q30m" # Flags to sendmail (if enabled)
So, just add
sendmail_enable="NO" # Run the sendmail daemon (or NO).
to your /etc/rc.conf file.
