I have a ProLiant DL740 (same architecture as 760) and 8-way SMP works
fine with BETA7 as long as Hyperthreading is disabled in the BIOS. 
Here's my dmesg (notice the "ACPI APIC Table" line.  That was missing
from your kernel's dmesg:
