Ok.  I finally was able to get back to this and
started digging around in the bios and it seems that
ACPI on this server came defaulted to OFF.  once I
turned it on, all the strange crashes on boot went
away.

Just thought I'd let everyone know.  Thanks to Doug
White for the initial help :).
