I have Samba installed on two FreeBSD boxes and one Mac OS X laptop and have not had the problems you are describing. I have had choppy audio from MP3's, but that came from problems with a wifi connection. I have also found that some Windows media players (I can't remember which ones right now because I don't use Windows much anymore) need read and write access to the files - at least that is the change I made to the share that allowed them to be played (this was a looooong time ago, though, so I don't know whether it was me not understanding what I was doing - which might have been the case - or if it was something else that was quirky).
