Personally, having ~20 years experience building and installing kernels. I would prefer kernels to be installed as kernel.<FOO> where <FOO> is replaced by the config file name. This allows multiple kernels to be installed in a standardised manner. Replacing /kernel (/unix, /vmunix etc.) should be a explicit manual step.
