It did finish installing everything (without symbols). Well almost
everything, this was the output at the end of the upgrade

Just for kicks I tried to run it anyways. It worked if I was sitting local
to the machine. However when I run everything in a VNC session it starts to
show the splash screen and loads things and then bombs out with the
following messages. It appears to be something with my fonts but I am not
sure why it works if I startx on the local machine or if I start it up in a
VNC session.

In general, you need to rebuild gnucash, guile, and libltdl with
symbols. That should help narrow down the problem.
