When you ran 'make install' after building your kernel, it renamed your old kernel to kernel.old. When the bootloader countdown starts, press the spacebar (or any key except ENTER) and you will get the bootloader prompt. Type "unload" and then "boot /kernel.old". In the future, plese direct questions like this to freebsd-questions@freebsd.org. Thanks.
