Well, it would probably work pretty well, but what's the benefit you get from using Darwin like that? Without all the rest of Mac OS X, Darwin doesn't stand out from the crowd in any particularly interesting ways. It might be fun to play with, but for a serious workload I'd go FreeBSD.
