This is almost right, you don't need to use relay-domains, just the
/etc/mail/access file.  You then need to rebuild the access database with
the following -
makemap hash /etc/mail/access < /etc/mail/access

You've already stated that you know what to do with the domains MX records
so I assume you've got that bit right.
