The computer > runs 6.0, and Gnome is a recent 2.12 The default paper size looks to be stored in /usr/X11R6/share/gnome/libgnomeprint/2.12.1/globals.xml. The Option Id is PhysicalSize. Changing the Default value to USLetter should achieve what you want.
