Another approach to this would be to have an install-fest, in which everyone in the class brings in their machine, and you set up a network for everyone to install from. For those who don't have network cards in their machines, have a few CDs to pass around and do people one at a time. We tried a freebsd/linux/other things installfest at the local SAGE meeting, and it did _not_ go well, mostly becuase we had like 8 people who brought CDs to share, and no one needed to install; one guy needed to fix an already finished redhat installation that had some kind of problem, and that was about it. It was a rather lame evening. For your situation though, I think that the installfest approach will work well, if you are careful to organize it well.
