Git provides atomic mirroring natively via cloning.
I think cvsup provided that as an intermediary reading cvs.
I think svn requires a checkout, then the non-commit-atomic rsync.
Gnats is hopefully being gutted for a real ticketing system,
but I have not seen much open public discussion on it.
The raw mailing list archives is a huge value to be able
to mirror and load into your local MUA/searcher.
And if someone would set the forum to send out an
archive mail per post that would be just as cool and useful.
Www should be from and just a repo mirror as usual.
The wiki needs to present an export/mirror interface too.
MediaWiki does that well, and you can back any good
wiki with git or some rcs, but again, who will express
interest, talk, and let features / migrate all these good things... ???

People like to do local things with all these datas :)
